Oreo Chocolate Chip Banana Muffins

1 1/2 cups all purpose flour
1/2 cup white sugar
1 Tablespoon baking powder
1 egg
1/2 cup buttermilk, or yogurt
1/2 cup vegetable oil
1 teaspoon vanilla extract
2 very ripe bananas, mashed with a fork
1/2 cup mini chocolate chips
12 Oreo cookies, chopped

Preheat your oven to 400F, and like a muffin pan with 12 paper liners.

Combine flour sugar, baking powder in a large bowl.

In a separate bowl, combine the egg, buttermilk, vegetable oil, vanilla, and mashed banana. Once combined add to the dry. Only mix until just combined.

Add the mini chocolate chips and oreos, fold gently into the batter. You don’t want to over mix with the oreos, or your muffins will get a gray appearance.

Spoon batter into the prepared muffin pan.

Bake 17-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool 5-10 minutes in the muffin pan, and then remove to a wire rack to cool completely.
